So this is in no way a “from the garden” recipe, but this green jello recipe is a family classic around here. Growing up, my mom always made this jello salad for Thanksgiving. Shortly after my husband and I were married we were living about an hour from my uncle and they invited us to Thanksgiving with their family.
Being young and naive, I showed up with this jello without telling them beforehand. I found out later they already had their own made and quietly put it back in the refrigerator after we arrived with ours! Apparently this really is a family recipe and comes from my grandmother.
After my mother died in September 2022 we realized no one in the family had written down how to make this. I couldn’t remember how, as it had been many years since my “contribution” to Thanksgiving at my uncle’s house. Thankfully a quick phone call to my uncle produced the recipe and I was able to make it again for Thanksgiving dinner in 2022.
Green Jello Recipe
To make this you will need one large box of green jello, one can of crushed pineapple and two cups of cottage cheese. You will also need ice. Add the hot water to the jello and stir until it’s dissolved. Add ice and stir until it begins to gel. Scoop out the excess ice and stir in the pineapple and cottage cheese then place in the fridge for a few hours.
If you triple the recipe you can use an entire carton of Costco cottage cheese. Given that we have 7 kids, it’s usually tripled at our house now!
